Beet Quinoa with Spinach

Beet Qunioa Spinach breakfast bowl

Eating for your chakras

INGREDIENTs - serves 2 ppl

Salad:

  • 1 cup of Quinoa

  • 1/4 of Beet Juice

  • 3 cups of Spinach

  • 2 cups of Cauliflower Florets

  • Blackberries

  • 2eggs - poached

Vinaigrette:

  • 1/3 cup balsamic vinegar

  • 1/4 cup pomegranate juice

  • 3 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tsp honey (or maple syrup for vegan)

  • 1 tsp garlic powder

  • 1 tsp oregano

  • 1/4 cup pomegranate seeds

  • Salt and pepper

Whisk together all the ingredients. Season with salt and pepper.

DIRECTIONS

  • Cook quinoa according to instructions. Let it cool and whisk in the beet juice.

  • You can buy Beet Juice or just use your Juicer and sequence juice from one Beet

  • Roast some cauliflower in a cast iron skillet with olive oil; once soft season with turmeric and s + p

  • Boil or poach an egg - of your choice

  • Assemble the dish: use a handful of spinach , add quinoa, roasted cauliflower, sprinkle with some blackberries and topped with an egg. ( your choice)

  • Topp the breakfast bowl with the vinaigrette
