Kale Detox Salad
Kale Detox Salad SERVES 6 (VEGAN)
3 large beets, peeled and shredded (2-3 cups)
1/2 head green cabbage, finely chopped (2 cups)
1 bunch Tuscan kale, de-stemmed and chopped in thin strips (2 cups)
1/4 cup fresh herbs, finely chopped
zest of 1 lemon
Dressing for Salad
2 lemons, juiced (4 Tbs)
1/3 cup nut butter (see below)
1 Tbsp fresh ginger, grated
1 Tbsp fresh garlic, grated
3-4 Tbsp apple cider vinegar
- Place ½ cup of nuts ( your choice - I like sunflower seed) in a food processor for about 5 minutes, or until smooth
Combine all the ingredients of the salad in a large mixing bowl.
Combine all ingredients in for the dressing in a small bowl and whisk together until everything is incorporated.
