Kale Detox Salad

Kale Detox Salad SERVES 6 (VEGAN)

INGREDIENTs

Detox salad 

  • 3 large beets, peeled and shredded (2-3 cups)

  • 1/2 head green cabbage, finely chopped (2 cups)

  • 1 bunch Tuscan kale, de-stemmed and chopped in thin strips (2 cups)

  • 1/4 cup fresh herbs, finely chopped

  • zest of 1 lemon

Dressing for Salad

  • 2 lemons, juiced (4 Tbs)

  • 1/3 cup nut butter (see below)

  • 1 Tbsp fresh ginger, grated

  • 1 Tbsp fresh garlic, grated

  • 3-4 Tbsp  apple cider vinegar

Nut Butter 

  • Place ½ cup of nuts ( your choice - I like sunflower seed)  in a food processor for about 5 minutes, or until smooth

DIRECTIONS

  • Combine all the ingredients of the salad  in a large mixing bowl.

  • Combine all ingredients in for the dressing in a small bowl and whisk together until everything is incorporated.
